Default healthy pumpkin pie???

does anyone have a good recipe for a good/healthy pumpkin pie (w/ or w/o crust)

particularly low sugar/fat if possible??

You can buy pure pumpkin in a can and add the spices yourself. Cinnamon, Nutmeg, Splenda, Vanilla, Egg Whites and Whey Protein are what I use. There are pre-made pie shells as well, available from Kraft and Keelber, graham cracker ones and whatnot. The sugar and fat values are not bad for a serving or two, just don't eat the whole pie in one sitting! There are a few different ones available, look around.

how long do you cook yours for and at what temp? do u have measurements for the stuff you add like spices/egg whites/proteins?

thanks for the pie shell idea, i'll take a look around and see if i can find a decent lower fat/sugar one

I preheat the oven to 400°F and it takes between 45 mins to an hour, you'll see the top start to golden a bit and crack. 6 packets of splenda, 3 egg whites, 90g of whey (Both Chocolate and Vanilla taste great), a capful of vanilla, cinnamon and nutmeg to taste. One can will fill an 8" pie shell, I think it was like 746ml of pumpkin. It's easiest to mix it all in a blender, but some if gets stuck to the sides and is hard to get out, so I just use a large mixing bowl.

wow, that was really helpful, i think i'll give it a shot sometime this week. maybe look into making my own healthy crust if i can find a good recipe. how do u think PB protein would taste? or should i stick with vanilla?

I've never really tried making my own crust, post back if you find a good recipe. The taste of the whey doesn't come out all that strong so PB probably would not make much of a difference, try it and see what you think.

i think ill try it and let u know how it comes out, and ill keep you in mind if i find a healthy crust alternative (hopefully something with Fiber One or something)
